CHICKEN, RICE & DRIED FRUIT TAGINE

Take your tastebuds on a trip to Morocco with this succulent Chicken Tagine, full of aromatic spices and topped with Tasti toasted Pine Nuts and Slivered Almonds.

INGREDIENTS

200g Tasti Dried Apricots, coarsely chopped

70g Tasti Pinenuts (toasted 10 minutes)

70g Tasti Slivered Almonds (toasted 10 minutes)

1/3 cup olive oil

2 large onions, sliced very thin

2 cups brown jasmine rice

2 teaspoons turmeric

2 good pinches saffron

1 tablespoon cinnamon

1 tablespoon ginger, grated

8 cups water

8 chicken drumsticks

2 tablespoons orange juice

1 large bunch parsley, finely chopped

METHOD

  1. Heat the oil in a wide bottom pot.

  2. Add the onion and cook on a medium flame, until very dark.

  3. Add the rice, turmeric, saffron, cinnamon and ginger, and sauté a few minutes, until fragrant.

  4. Add the water and bring to a boil. Reduce to medium, and cook covered for 20 minutes.

  5. Stir in the chicken and cook covered for 15 more minutes. Stir in the Tasti Dried Apricots, orange juice and parsley and cook covered 5 more minutes. Transfer everything to a platter, and stir in the Tasti Pinenuts and Slivered Almonds just before serving.
